Recipe: Courgette Ribbon Salad

While visiting my lovely friends Lianne and Stuart in Monaco last weekend, I took the opportunity to introduce them to Raw Food cooking – or uncooking should I say. Fortunately they were both very willing to getting on my raw vibe so I told them as much as I could about everything I know about raw food and the many benefits. While Lianne and I knocked up the below salad which went down very well, I think it was the raw chocolate I made them that really won them over!
If you fancy something a  little more hearty than “just another salad”, try adding ribbons of courgette to your salad – it really makes it feel much “meatier”. I have introduced a lot of my friends to raw courgette and they love it. I’m not a fan of big chunks of raw carrot or courgette but grated in a salad, they are delicious!

Courgette Ribbon Salad

 Courgette Ribbon Salad – Serves 2

  • Half a romaine lettuce
  • 1 avocado
  • Half red pepper
  • Half yellow pepper
  • 1 grated carrot
  • 2 courgettes – thinly sliced with a mandolin. Then cut into thin ribbon-like strips
  • 7 baby tomatoes
  • Dress with olive oil and balsamic vinegar

Why this salad is good for you

Avocado contains all 6 human nutritional needs in abundance – water, fat, protein, natural sugar, vitamins and minerals. Peppers are packed full of Vitamin C, beta-carotene and other antioxidants which protect against free radicals which contribute to ageing and cancer. Courgettes are 90% water, low in calories and fat and contain Vitamin A, C, Folate and Potassium. Carrots are abundant with vitamins and minerals as well as beta-carotene, making them immune-boosting, skin-clearing and great at supporting digestion. Tomatoes are very soothing to the body and their nutrients can ease problems with digestion, the liver and the skin, are are rich in the antioxidant lycopene.

I’m Stuarts brother, Mark, sat with Stuart now looking through your website, so interesting, I’m deffinately going to try your recipes, lianne made us the avocado salad last night, so nice!
