Recipe: Zippy’s Chocolate Orange Macaroons

I had some left over almond pulp from making Almond milk the other day, so I used them in these delicious macaroons. (I really need to think of a new word for delicious – I overuse it way too much!)

Originally I named these “Chocoalte Orange Macaroons” but when i balanced them on top of eachother, I discovered they possessed an uncanny similarity to a TV character I grew up with called Zippy! Or am I seeing things? I have been known to overdo it on the superfoods sending me into an ecstatic supercharged euphoria! Maybe it’s time for a nap…or a straight jacket?!

Zippy’s Chocolate Orange Macaroons

  • 3 cups desiccated coconut
  • ½ cup almond pulp*
  • 1 cup cacao powder
  • 1/2 cup agave nectar
  • ½ cup tahini
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange rind
  • 1 tablespoon orange juice

*Almond pulp is what is left after making Almond Milk

Combine all ingredients in a food processor and mix thoroughly. Roll into balls and dehydrate for 6-8 hours at 105◦F or place on a tray in the overn on the lowest setting, leaving door ajar.

I think I ate about 6 of these throughout yesterday…but the great thing is it all the ingredients are good for you with no nasty processed sugar!

OMG these look so yummy!!
I want to make these soon but just wanted to check that the amount of cacao powder is correct. 1 cup seems like a lot (that stuff is expencive!!)
if 1 cup is correct, is there anything I can sub? like 1/2 cup cacao 1/2 cup something else? thanks for the awesome recipe!

Yip, from memory, 1 cup sounds right. Try substituting with 1/2 carob powder instead? It’s a great sub for cacao and is probably slightly cheaper.
