I know you’re probably wondering why on earth I’m posting a recipe for a salad in November when all you want to be doing is curling up on the sofa digging into hearty soup and all I can say is “I hear ya!” (Soup recipe will be posted very soon..) But this salad is one that features in my diet almost daily. I don’t have to think about it – I just throw it all together and it’s super simple and nutritious! So with no further delay – here it is.
Spinach and Tomato Staple Salad
- 2 cups fresh spinach (organic if possible)
- 3 baby tomatoes, quartered
- 3 sundried tomatoes in oil, sliced (I personally think Waitrose serve yourself deli are the best)
- 1 avocado
- 1 spring onion, finely chopped
- 1/4 red pepper, sliced
- handful cashews
- handful punpkin seeds
- any other nuts or seeds you would like to add
The basic salad consists of, yep, you guessed it, spinach and tomato and to keep it varied I switch the nuts and seeds I throw in. On this particular day, I was feeling kinda crazy and added a sprinkle of this stuff which is delicious and excellent for the time-poor.
I like to add my Turmeric Tornado dressing for an extra potent kick-ass cancer boost. (Cancer cells find turmeric so abhorrent that they actually commit suicide – who knew! If you’re feeling geeky and want to know the real name for this process, it is called apoptosis.)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 garlic clove, pressed
- ¼ teaspoon turmeric
- Pinch black pepper
Mix all ingredients together in a high speed blender, pour over salad and enjoy knowing you’re kicking cancer-cell butt!
