Recipe: Chocolate Ice Cream Cups

Last week when I made my Vanilla Chocolate Cheesecake, I had some leftover chocolate cheesecake mixture so I poured them into some cups and popped them in the freezer and they are gooood! They remind me of Milk Lollies I used to eat when I was younger – remember those bad boys!?

I love recreating foods I used to eat from healthier raw foods so I can feed myself, my family and my friends safe in the knowledge that I’m feeding them well. This recipe is super easy and you add other things such as desiccated coconut, cranberries, buckwheat crunchies (sprouted and dehydrated buckwheat), raisins, whatever you have in your cupboard for a little twist.

Filling

  • 1 1/2 cups cashews
  • 1 cup water
  • 1/2 cup agave nectar
  • 1 tsp vanilla extract 
  • 2 tablespoons lucuma
  • 1/2 cup coconut oil
  • Pinch salt
  • 1/2 tsp ground cinnamon
  • 3 tbl cacao powder
Instructions
Combine all the filling ingredients in a high-speed blender until smooth. Spoon the mixture into silicone cupcake moulds (or something similar which is easy to remove the chocolate from.) Place in the freezer to set and enjoy! Keep stored frozen.
