Recipe: Carrot, Onion & Apple Salad

A few years ago, I had no idea about how to make a healthy salad. Sad but true! I grew up in a household that ate meat, potato and veg for dinner but salad never seemed to feature. As I started to learn about nutrition and what my body required in order to heal, salads became my staple. Raw living food, enzymes, minerals, vitamins and phytonutrients all essential for optimal health.

Sometimes you just want some crunch which this salad certainly delivers on. It takes no time at all and delivers your body with a whole lotta goodness! Just a heads up, I chose to steam my broccoli just because I fancied it so if you’re not a fan of raw broccoli, feel free to steam or boil it, but not til it’s soggy!

Carrot Onion Apple Salad (Serves 1)

  • 1 carrot, grated
  • 2 spring onion, chopped finely
  • 1 apple grated
  • 4 broccoli florets, steamed or boiled
  • 1 celery stick, finely chopped
  • 1 small handful raisins

Dressing

  • 2 tablespoons flax oil
  • 1 tablespoon orange juice
  • 1 teaspoon raw honey

Place the broccoli in a steamer until cooked al dente. Place all other ingredients in a bowl, pour over the dressing, serve with broccoli and enjoy! (Make sure you stir or whizz the dressing well as the honey can get stuck at the bottom of the jar or container.)
