RECIPE: Quinoa Hemp & Rocket Salad

So this recipe isn’t technically raw but quinoa is such an amazing grain which makes it a wonderful addition to any salad or meal.

Ingredients

  • 2 handfuls rocket, chopped roughly
  • 1 celery stalk, chopped finely
  • 1/2 avocado, chopped
  • 2 cups cooked quinoa (1 cup to 2 cups water and boil)
  • 1 small handful raisins
  • 1 spring onion, chopped
  • 1 handful hemp seeds
  • 1 small handful pumpkin seeds
  • 1/4 yellow pepper, chopped

 

Creamy Almond Dressing

  • 1 tablespoon almond butter
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 clover garlic
  • 2 tablespoons water

Place all salad ingredients in a bowl. Combine the dressing ingredients in a mini prep and whizz until creamy and smooth. Pour over the salad and mix well. Enjoy!

 

QUINOA FACTS

  • It contains numerous anti-inflammatory nutrients and phytonutrients
  • 1 cup quinoa contains 5 grams of fiber (20 percent of daily value)
  • It contains all eight essential amino acids essential for the building blocks the body requires
  • It’s suitable for those with wheat and gluten intolerance

Hi Polly, I made this last week twice! It was very nice, my son loved it. I had some left over so thought we could have it for lunch the next day. It was ok but not best left overnight as the juice disappears. The second time I made it the night before a picnic with friends. (I am giving up wheat so the easy sandwich ideas are difficult to replace) I left out the dressing and put it on fresh just before we ate it and it tasted as good as if I had made it that morning. I know avocados are good for me but I just can’t take to them. So any chance to use them in a way that can hide them is great for me.
