There’s nothing better than a good salad, especially if you’ve done your fair share of overeating over the festive period. One of the keys to staying healthy is to have a fully stocked fridge full of greens, fresh fruit and vegetables. This way, you can throw a delicious salad like the one below together, make a smoothie or juice which floods your body with much needed vitamins and minerals. Pomegranate isn’t something that I buy very often but I am loving these colourful balls of goodness.

Pomegranate and Goji Detox Salad
- 2 handfuls of rocket leaves
- 2 inch chunk cucumber (sliced into thin rounds, stacked on top of eachother and sliced into strips)
- 1/2 avocado, cubed
- 1/4 red pepper, chopped into small pieces
- 2 florets broccoli, chopped into super fine pieces
- 1 handful goji berries
- 1 handful pumpkin seeds
- 1-2 handfuls pomegranate seeds
- 1 small handful shelled hemp seeds
Dressing
- 2 tablespoons cold-pressed olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 garlic clove, crushed
- 1/4 teaspoon turmeric
- Pinch black pepper
- Sprinkle of crystal manna (optional and definitely not essential)

Instructions
Place all ingredients in a bowl, pour over the dressing and serve. (be sure to chop the broccoli into very small bits, especially if you’re not keen on raw broccoli. You won’t even notice it!)
